Ingredients:
Chocolate has been utilised being a present for the gods, kings and an exotic gift for thousands of years. Even currently a box of luxurious truffles says; “Thank You”, “I Love you”, “I’m sorry” or even, “I hope you really feel better.” Nothing expresses these sentiments better than the beautifully boxed truffles of today.
- 1/4 C butter
– 1/2 C confectioner’s sugar
– 1 teaspoon almond
– extract one egg yolk 8 oz
– white chocolate, broken into small pieces one C chopped blanched almonds, lightly toasted
Makes about 2 dozen truffles
- Melt chocolate Brown and butter inside top of a double boiler over low heat, stirring constantly.
– Take away from heat. Add sugar, egg yolk and almond extract; beat with an electric mixer till smooth.
– Transfer to a shallow glass casserole dish.
– Cover and refrigerate one hour.
– Shape mixture into 1 inch balls.
– Roll in almonds.
– Cover and refrigerate a minimum of 8 hours.
– Location in miniature foil cups at room temperature to serve.
– Shop in airtight container in refrigerator.
2. Hazelnut or Almond Truffles
When folks think of chocolate they think of one thing sensual, sweet, sumptuous, gratifying, luxurious, creamy, seductive, silky and ooohh so good! Is there one more food which will express these feelings in a superior way? It has often been associated with passion, romance and love, and such association goes as far back as our ancient civilizations. Some ancient civilizations believed it brought wisdom, energy and also sexual power.
The Invention in the Truffle
Ingredients:
- 2/3 cup finely ground toasted almonds or hazelnuts
– 7 T melted butter
– three or more oz. bittersweet chocolate
– three oz. milk chocolate
– one T Amaretto (for almond) or 1 T Frangelico (for hazelnut)
– 4 egg yolks
– 2/3 cup confectioner’s sugar
– 1/2 tsp. vanilla extract
– 1 1/2 tsp.
Creates about 30 truffles
Note: Pregnant or nursing women, young kids or any with an immune deficiency will need to not eat foods created with raw eggs.
